Chewy Oatmeal Craisin Cookies!


The roomies and I decided to try baking cookies from scratch on a whim one day and these delicious oatmeal craisin cookies are what popped out. We have a giant pack of rolled oats that we picked up from Costco so we figured we could get rid of some by making oatmeal cookies. We pretty much used this Martha Stewart recipe, but swapped out raisins for craisins because they're just plain tastier. 

Here's what you'll need:
  • 1 1/2 Cups Rolled Oats
  • 1/2 Cup Flour
  • 1/2 Cup Craisins
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 6 tbsp. Unsalted Butter
  • 1/2 Cup Packed Dark Brown Sugar
  • 1/4 Cup Granulated Sugar
  • 1 Large Egg
  • 1 tsp. Vanilla Extract

If all you have is just regular slated butter like we did, don't add the extra 1/2 tsp. of salt and instead add extra sugar to offset the saltiness! 


Preheat the oven to 350. You're going to mix the ingredients in two separate bowls. In one, mix together the oats, flour, craisins, baking soda and salt. In the second, mix the sugar and butter until it's creamy. Then mix in the vanilla and egg. Once the second mixture is completely blended, slowly add in the dry mix in your first bowl. 


Scoop dough onto a baking pan or sheet and pop them into the oven for 12 to 16 minutes!


And voila! Oatmeal craisin cookies! We added a scoop of vanilla between ours to make ice cream cookie sandwiches. It wasn't the healthiest of breakfasts, but I'm not complaining. :)
